KETO SPANISH CAULIFLOWER RICE
This keto side dish makes the best meal prep recipe. Make up a double batch of the easy keto spanish cauliflower rice to use thoughout the week. Tomato, onion, garlic and cumin are sauted with cauliflower rice to make a delicious side.

Keto Spanish Cauliflower Rice Ingredients
- 4 cups riced cauliflower
- 1/2 cup diced tomatoes, canned or fresh
- 2 tablespoons minced onion
- 1 clove garlic
- 3 tablespoons avocado oil
- 1 teaspoon salt
- 1/2 teaspoon cumin
- 1/4 cup chicken bone broth
- 1/2 cup diced zucchini
- 1 tablespoon stone ground mustard (optional)
- 1/4 cup chopped cilantro
Keto Spanish Cauliflower Rice Directions

Add tomatoes, onion and garlic to a blender or food processor. Puree until smooth. Set aside.

Heat oil in a skillet over medium-high heat. Add cauliflower and saute for 2 minutes.

Stir in tomato puree and cook for additional 2 minutes.

Add broth, salt, cumin, mustard and zucchini. Cover and continue to cook until cauliflower rice and zucchini are softened and most of the liquid is evaporated.

Remove from heat and stir in cilantro.
