KETO PUMPKIN SOUP

 


Fall is right around the corner! Better start planning your comfort meals. This one is definitely one for the books plus it's SUPER easy. One thing I will say, is keep the spices low - especially nutmeg because otherwise it will ruin it!

What you will need:

  • 2 cups (500g) pureed pumpkin
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • 1 tsp nutmeg
  • 1/2 tsp allspice
  • 1 tsp cinnamon
  • salt/pepper
  • 1 tsp minced ginger

Directions

  • Place all your ingredients into a deep pan (or blender). Use a immersion blender (or regular blender) to puree all the ingredients together. 
  • Pour the soup into a stovetop pot and bring it to a boil.
  • Serve hot & drizzle a small amount of cream into the soup. Top with fresh parsley or oregano. 
  • This makes roughly 8 servings.
