KETO ONION RINGS & CURRY DIP || COCONUT ONION RINGS

 

Got a craving for onion rings? Step it up a notch and fry'em with COCONUT. You will not regret and possibly won't go back to regular onion rings anytime soon. Want to step it up ONE more notch? Make a deeeeelicious curry dipping sauce!


In this blog, I go over both methods of cooking these - deep frying and baking in the oven. However, I would recommend frying them because they brown more easily and are much more crispy. I used canola oil to fry'em.

What you will need for keto onion rings:

  • 3 medium sized onions
  • 2 eggs
  • ground unsweetened coconut (roughly a cup, give or take)
  • 1/2 cup sour cream
  • 1/2 teaspoon curry paste


Directions

  • Begin by cutting your onions into rings - that means you'll be slicing them between the ends and not from end to end. Make them fairly thick.
  • Once you've cut them all up, dip each ring into your eggs, which should be cracked & lightly beaten. Make sure your rings are coated with the egg. 
  • Toss the rings in the ground unsweetened coconut - don't use your fingers to pick them up though - better to use a fork so you don't rub the coconut off. 
  • Set your ring aside and continue with the rest. 
  • If you're going to deep fry them, I used canola oil.. and fried them until they were a nice golden brown. 
  • If you're going to bake them, try at 400 for 25 minutes.. However again, they don't crisp up as nice but they are still veryyyy delicious. 
  • To make the dip, mix together your sour cream and curry paste. (I used yellow curry paste from the store)
