 Ingredients:

  • 1/4 Cup Olive Oil
  • 1/4 Cup Coconut Flour 
  • 1 TSP Xanthan Gum 
  • 1/2 Onion
  • 1/2 Green Bell Pepper
  • 1 Rib Celery
  • 2 Cloves Garlic
  • 3 Cups Chicken Stock
  • 1 Bay Leaf
  • 1 TSP Freshjax "Bold Byou" seasoning 
  • 1 TSP Dried Thyme Leaves
  • 13 OZ Spicy Andouille Sausage
  • 10 OZ Can Chicken Breast/Thigh
  • 2 Green Onions
  • 3 TBSP Fresh Chopped Parsley
  • 1 Cup Tomato Sauce
  • 12 OZ Bag Frozen Cauliflower Rice
  • Salt to taste





Let's Do This!

  • Brown sausage in pan and set aside.
  • Chop onion, green pepper, celery, parsley, and green onions. Set aside.
  • In a large pot, mix oil, coconut flour, and xanthan gum
  • Cook over medium-high heat, stir constantly, until it becomes the color of peanut butter.
  • Add onion, garlic, green pepper, and celery.
  • Stir quickly for 4 minutes.
  • Add stock, seasonings, chicken, and sausage.
  • Bring to a boil.
  • Add tomato sauce, green onion, and parsley. 
  • Add salt to taste.
  • Allow to simmer for about 10 minutes.
  • Add in frozen cauliflower rice.
  • Once cooked, serve.
  • Enjoy!
