Keto Gumbo Recipe

Ingredients:
- 1/4 Cup Olive Oil
- 1/4 Cup Coconut Flour
- 1 TSP Xanthan Gum
- 1/2 Onion
- 1/2 Green Bell Pepper
- 1 Rib Celery
- 2 Cloves Garlic
- 3 Cups Chicken Stock
- 1 Bay Leaf
- 1 TSP Freshjax "Bold Byou" seasoning
- 1 TSP Dried Thyme Leaves
- 13 OZ Spicy Andouille Sausage
- 10 OZ Can Chicken Breast/Thigh
- 2 Green Onions
- 3 TBSP Fresh Chopped Parsley
- 1 Cup Tomato Sauce
- 12 OZ Bag Frozen Cauliflower Rice
- Salt to taste
Let's Do This!
- Brown sausage in pan and set aside.
- Chop onion, green pepper, celery, parsley, and green onions. Set aside.
- In a large pot, mix oil, coconut flour, and xanthan gum
- Cook over medium-high heat, stir constantly, until it becomes the color of peanut butter.
- Add onion, garlic, green pepper, and celery.
- Stir quickly for 4 minutes.
- Add stock, seasonings, chicken, and sausage.
- Bring to a boil.
- Add tomato sauce, green onion, and parsley.
- Add salt to taste.
- Allow to simmer for about 10 minutes.
- Add in frozen cauliflower rice.
- Once cooked, serve.
- Enjoy!
