Keto Corn Dogs

INGREDIENTS

  • 1/4 cup Birch Benders Keto pancake and waffle mix
  • 1/2 cup shredded mozzarella
  • 2 tsp coconut flour
  • 1/2 tsp baking powder
  • 2 large eggs
  • 40 drops OOOFlavors corn bread concentrate (1/3 tsp)
  • 1/2 tsp sugar free honey
  • 3 franks all beef franks, cut in half the short way





DIRECTIONS

  • Pulse pancake mix, mozzarella, coconut flour, and baking powder together in a food processor until it resembles bread crumbs (6-7 pulses).
  • Add the egg, corn bread concentrate and sugar free honey until it is a smooth batter (roughly 10 seconds).
  • Transfer the batter to a plastic sandwich bag and cut off one corner to create a disposable piping bag (see the video above on how to do this).
  • Pipe the batter into each of the slots on your preheated corn dog maker, filling them between halfway and 2/3rds full.
  • Gently press the hot dog halves into the batter so that the batter comes up each side, then pipe a strip of batter on top of each hot dog. You don’t need to be super precise with this step, as the batter will rise up to surround the dogs.
  • Cook until you no longer see steam coming from the corn dog maker. This is usually in the 6 minute time frame.
  • Remove to a wire rack to let cool for 1-2 minutes then serve.




NOTES

  • I do not use sticks for these corn dogs as I find them to be a waste of time and effort.
  • IMPORTANT: The sugar free honey I use in this video contains maltitol. Though this is an alcohol sugar, it has a high glycemic index and may affect your blood sugar. I have not found the amount used in this recipe to be enough to knock me out of ketosis, everyone is different. If you want to error on the side of caution, I would suggest not including it in the batter.
