CRUNCHY KETO NUT & SEED MIX (SUGAR-FREE GRANOLA)

 


Who doesn't love sweet, crunchy granola? This keto mix is packed with nuts, seeds and protein and is also free from refined sugar. If you have a sweet cereal craving, then try this irresistible grain, gluten and dairy-free keto granola for a healthy breakfast or snack!


A delicious, crunchy keto nut and seed mix. Gluten, dairy and refined sugar-free! Perfect on top of yoghurt or as a portion on its own served with fresh berries and milk.

INGREDIENTS

  • 40g coconut flakes
  • 140g almonds
  • 150g mixed seeds
  • 90g flaked almonds
  • 150g pecans
  • 70g agave nectar
  • 2 tbsp coconut sugar
  • 3 tbsp coconut oil
  • 4 tbsp chia seeds
  • 1 1/2 tsp cinnamon
  • 1/4 tsp sea salt





METHOD

  • Begin by preheating your oven to 160c. In a bowl, add the nuts and seeds together and stir.
  • Pour the agave nectar and coconut oil into a pan over medium heat to melt together. Once melted, pour over the nut and seed mix and stir until the liquid has covered the granola mix.
  • Add the cinnamon and sea salt and stir once more.
  • Line a large baking tray with parchment paper and pour the granola mix onto the tray. Spread out evenly. Pop in the middle of the oven and bake for 20 minutes.
  • Remove, toss and pop back in the oven for a further 5 minutes - increasing the heat to 170c.



  • Once golden, remove your granola mix from the oven and leave to cool completely.
  • Once cool and crisp, pop your keto granola mix in an air-tight container.
  • I like to enjoy a 50g serving with fresh berries and a little milk - try it.
